My husband and I love lamb, so I got some chops and made this for dinner recently. Check out my marinade recipe after the jump!
Lamb chops (I bought 3 slices for 3 pax and cut them into smaller pieces)
1 yellow onion (sliced into rings)
1 carrot (chopped into chunks) * feel free to add other vegetables
Marinade
Finely-chopped garlic (1 teaspoon)
1/2 teaspoon dry rosemary + dry thyme
Black and cayenne pepper (to taste)
Worcestershire sauce (2-3 tablespoons)
Teriyaki sauce *optional (1-2 tablespoons)
Sweet soy sauce (2 tablespoons)
1 teaspoon honey
Olive oil
Salt to taste (don't add too much, the soy sauce would be quite salty already and flavours will intensify in the oven)
Method:
1. Mix up the marinade.
2. Marinade the lamb chops for at least 30 minutes in the fridge
3. Drizzle olive oil onto the baking pan and line the chops in the tray.
4. Top with onion rings and veges. Drizzle a bit more oil on top.
5. Bake in a 160 degree (celcius) oven for 45 mins to 1 hour. May need more time depending on your oven.
*Different ovens behave differently, so keep an eye during the roasting process :) Check regularly to ensure that the meat doesn't dry out.
